Easy Baked Ginger Grouper - cooking recipe

Ingredients
    1 5-6 lb grouper (before cleaning)
    1/4 green pepper, thinly sliced
    1/4 tsp. margarine
    1 tsp. salt
    2 lb. can stewed tomatoes
    1 medium onion, thinly sliced
    1/4 cup cooking oil
    1/4 tsp thyme
    1 bay leaf
    1/2 to 3/4 cup ginger preserve (chutney and grated ginger will substitute)
Preparation
    Preheat oven to 350\u00b0.
    Put fish in flat casserole dish. Saute onion and green pepper; add tomatoes, ginger and spices; boil.
    Spoon over fish.
    Bake 30 minutes or until just done. Don't overcook.
    Serve with rice.
