Fried Yams - cooking recipe

Ingredients
    4 medium yams, peeled and cut into 1-inch thick slices
    4 c. water
    a dash of salt
    4 Tbsp. butter or margarine
    2 Tbsp. sugar
Preparation
    Soak sliced yams in water with salt for 30 minutes.
    Remove from water; drain and pat dry.
    Melt butter in large, heavy skillet until bubbly.
    Add yams and brown quickly on both sides. Sprinkle with sugar.
    Stir gently to coat both sides.
    Cover; reduce heat to low heat.
    Simmer for 15 to 20 minutes or until tender.
