Ingredients
-
1 yellow cake mix
3/4 c. brown or white raisins
3/4 c. chopped pecans or walnuts
1 tsp. vanilla
at least 2 c. light or dark rum (maybe a bit more if the cook is thirsty!)
1 stick butter or margarine
1 c. sugar
Preparation
-
Grease and flour a Bundt pan.
Preheat oven to setting as directed on the cake mix box.
In a mixing bowl, blend together cake mix, nuts, raisins and vanilla.
Substitute one-half the liquid required in the cake mix with rum.
Bake the cake according to package directions.
Set aside to cool.
When cool, remove cake from Bundt pan and place on a plate.
At this time additional rum can be sprinkled on the cake for more flavor.
Prepare a glaze in a pot atop the stove consisting of the butter, sugar and 1/2 cup rum.
Heat and stir until smooth.
Be careful as the rum may catch fire!
Spoon the glaze mixture over the cake.
The cake is best served chilled.
