Stuffed Zucchini - cooking recipe

Ingredients
    6 medium zucchini
    3 c. soft breadcrumbs (about 6 slices), cubed
    1/2 c. grated Parmesan cheese
    1 small onion, minced
    3 Tbsp. chopped parsley
    1 tsp. salt
    dash of pepper
    2 eggs, beaten
    1 lb. bulk Italian sausage
    4 oz. Mozzarella cheese
    spaghetti sauce (homemade or store brand)
Preparation
    Brown sausage.
    Wash zucchini; cut off ends.
    Do not peel. Cook in boiling, salted water for 5 minutes.
    Halve lengthwise and remove pulp with spoon.
    Combine pulp, bread crumbs, sausage, cheese, onion, parsley, salt, pepper and eggs.
    Fill zucchini shells and top with sauce and Mozzarella cheese.
    Bake at 350\u00b0 for 30 minutes.
