Carrot Cake - cooking recipe

Ingredients
    3 eggs, beaten
    3/4 c. vegetable oil
    3/4 c. buttermilk
    2 c. sugar
    2 tsp. vanilla extract
    2 c. all-purpose flour
    2 tsp. baking soda
    1/2 tsp. salt
    1 can (8 oz.) crushed pineapple, undrained
    2 c. grated carrots
    1 c. raisins
    1 c. chopped nuts
    1 c. flaked coconut
Preparation
    In a mixing bowl, combine eggs, oil, buttermilk, sugar and vanilla; mix well.
    Combine flour, cinnamon, baking soda and salt; stir into egg mixture.
    Stir in pineapple, carrots, raisins, nuts and coconut.
    Pour into a greased and floured 13 x 9 x 2-inch baking pan.
    Bake at 350\u00b0 for 50 to 55 minutes, or until cake tests done.
    Do not overbake.
    Remove to a wire rack to cool.
