Sweet Potato Souffle - cooking recipe

Ingredients
    2 c. cooked, mashed sweet potatoes
    1/2 c. hot milk
    5 Tbsp. rum
    4 Tbsp. butter
    pinch of nutmeg
    1 tsp. salt
    1 Tbsp. grated lemon rind
    4 beaten egg yolks
    4 stiffly beaten egg whites
Preparation
    Combine mashed potatoes, hot milk (mixed with rum), butter, nutmeg, salt, lemon rind and egg yolks.
    The fold in egg whites. Put in a buttered casserole and bake in a hot 400\u00b0 oven for 25 minutes.
    Serves 4 to 6.
