Zucchini Casserole Imperial - cooking recipe

Ingredients
    4 c. sliced zucchini
    2 c. boiling water
    2 eggs
    1 c. mayonnaise
    1 medium onion, chopped
    1/2 c. chopped green pepper
    1/4 c. chopped celery (optional)
    1 c. grated Parmesan cheese
    salt and pepper to taste
    1 Tbsp. butter or margarine
    2 Tbsp. buttered breadcrumbs (optional)
Preparation
    Cook zucchini until tender (not mushy); drain.
    In large bowl, beat eggs; stir in mayonnaise, onion, green pepper, celery, salt and pepper.
    Add zucchini.
    Turn into a greased 1 1/2-quart baking dish.
    Dot with butter and sprinkle with buttered breadcrumbs.
