Eggplant Parmesan - cooking recipe
Ingredients

1 eggplant
2 eggs
1 (16 oz.) can your favorite spaghetti sauce
1 box Italian flavored bread crumbs with Parmesan
2 c. grated Mozzarella cheese
1 c. sliced, fresh mushrooms
Preparation

Wash and peel eggplant. Slice into 3/8-inch slices.
Dip into beaten eggs until coated well, then place into seasoned bread crumbs until well coated.
Cook in electric pan at 300\u00b0 for 3 to 4 minutes on each side.
You may use olive oil, Pam or vegetable oil.
Make 2 rows in a 13 x 9-inch dish.
Pour sauce over fried eggplant.
Sprinkle with cheese and sliced mushrooms.
Bake at 350\u00b0 for 30 minutes until slightly golden.
Allow cheese to set for 10 minutes before serving.
Serves 4.
