Stuffed Zucchini - cooking recipe

Ingredients
    2 medium zucchini
    1 small onion, chopped
    1 c. mushrooms, chopped
    1/2 c. celery, chopped
    1 Tbsp. margarine
    1 medium tomato, chopped
    3/4 c. crackers, crushed
    1 egg
    1/2 c. grated cheese
    2 Tbsp. parmesan cheese
    1/4 tsp. salt
    1/8 tsp. pepper
    paprika
Preparation
    Cut zucchini in half length-wise.
    Scoop out pulp, leaving 1/4 inch shell.
    Combine onion, mushrooms, celery, margarine, and tomato in a microwavable dish.
    Cover with plastic wrap and cook 4 - 6 minutes.
    Drain.
    Add crackers, egg, grated cheese, parmesan cheese, salt, and pepper.
    Mound this stuffing in each zucchini shell. Cover and microwave 5 to 7 minutes.
    Sprinkle with paprika.
