Hoppin' John - cooking recipe

Ingredients
    1 16 oz. pkg. black-eyed peas
    6 cups water
    8 oz. slab bacon (cut into cubes)
    1 tsp. Tabasco sauce
    1 tsp. salt
    2 medium onions, chopped
    1 cup raw rice
    1 1/2 cups boiling water
Preparation
    Wash peas and place in large pan with cold water.
    Bring to a boil and boil 2 minutes.
    Remove from heat, cover and let sit for 1 hour.
    Fry bacon slowly until brown, drain.
    Add Tabasco sauce, bacon and salt to peas.
    Bring to a boil, lower heat and simmer, stirring frequently for 30 minutes or until rice is tender. Should be moist, but not wet.
    Makes 6 servings.
