Caesar Salad With Sourdough Croutons - cooking recipe

Ingredients
    1/2 c. fresh lemon juice
    2 Tbsp. Worcestershire sauce
    4 garlic cloves, coarsely chopped
    1/2 tsp. hot pepper sauce (such as Tabasco sauce)
    1 c. olive oil
    2 large heads romaine lettuce, torn into bite size pieces
    1 red onion, thinly sliced
    Sourdough Croutons
    1 c. freshly grated Parmesan cheese (about 3 oz.)
Preparation
    Blend first 4 ingredients in processor or blender. With machine running, gradually add oil in thin steady stream.
    Season to taste with salt and pepper.
    Prepare 1 day ahead.
    Cover and chill. Bring to room temperature before serving.
    Combine lettuce, onion and croutons in a large bowl. Toss with enough dressing to season to taste.
    Sprinkle with cheese and serve.
    Makes 6 servings.
