Eggplant Genovese - cooking recipe
Ingredients

1 large eggplant
slices of Mozzarella cheese
12 oz. tomato paste
2 Tbsp. olive oil
1 tsp. salt
1 tsp. brown sugar
1 tsp. oregano
1 tsp. basil
dash of garlic powder
Preparation

Mix the tomato paste with an equal amount of water.
Add herbs, salt and sugar; simmer on low heat to a boil.
Cut the eggplant in one-inch slices, lengthwise.
Pour oil in casserole and alternate layers of eggplant slices with cheese, finishing with the cheese.
Pour the tomato sauce over it and bake in preheated oven at 375\u00b0 for 35 to 40 minutes.
