Hearty Potato Soup - cooking recipe

Ingredients
    3 c. diced, peeled potatoes (3 medium)
    2 c. water
    1 tsp. salt
    3/4 c. chopped onion
    2 Tbsp. margarine
    2 Tbsp. flour
    2 c. milk
    1 tsp. parsley flakes
    1/4 tsp. pepper
Preparation
    Cook potatoes until tender.
    Without draining them, mash until size of pea.
    Meanwhile, cook onion in margarine for 3 minutes. Sprinkle with flour.
    Cook and stir 1 minute.
    Gradually stir in milk and cook, stirring often, 5 to 7 minutes until simmering and thickened.
    Stir in potato mixture and remaining ingredients. Yields 4 servings, 234 calories.
