Pueblo Beans - cooking recipe
Ingredients

1 lb. pinto beans (dried)
3 qt. water
1 lb. can tomatoes
1 large onion, chopped
8 slices bacon, chopped
1 1/2 tsp. salt
3/4 c. sliced celery
3/4 tsp. cinnamon
6 Tbsp. sugar
3 Tbsp. vinegar
Preparation

Wash beans. Put in a 6-quart kettle with 3 quarts water and simmer for about 4 hours. Mix remaining ingredients with beans and water. Place in a 4-quart casserole. Cover and bake at 350\u00b0 for 2 to 3 hours. Add more water if necessary. Yields about 10 servings.
