Easy Spanish Rice - cooking recipe

Ingredients
    3 slices bacon
    1 c. white rice
    1/2 c. chopped onion
    3 c. V-8 juice
    1/3 c. chopped green pepper
Preparation
    In skillet, cook bacon until crisp.
    Remove and crumble.
    In drippings over low heat, cook rice and onion until rice is browned and onion is soft, stirring constantly.
    Add V-8 juice and green pepper.
    Reduce heat to low and cover.
    Simmer 20 minutes or until rice is tender and liquid is absorbed.
    Garnish with bacon.
    Makes 4 cups.
