1 can Niblets Mexicorn
1 c. grated Cheddar cheese
1/2 c. oil
1/2 tsp. baking soda
1/2 c. buttermilk
1 c. self-rising cornmeal
3 eggs
1 c. chopped onion
1/4 c. sugar (optional)
