Banana Coconut Bread - cooking recipe
Ingredients

2 c. flour
2 tsp. baking soda
1/2 tsp. salt
3 eggs
1/2 tsp. lemon extract or lemon juice
1/4 c. sour cream
1 c. sugar
1 c. finely chopped nuts
1 1/2 c. sliced bananas
1/2 c. shredded coconut
1/4 c. butter
Preparation

Preheat oven to 325\u00b0.
Into a large bowl, sift together flour, baking soda and salt; set aside.
Put eggs, butter, lemon extract, sour cream and sugar in blender and mix, or mix by hand.
Pour egg mixture into flour mixture, stirring thoroughly.
Fold in nuts, bananas and coconut.
Pour batter into 2 lightly buttered 9 x 5 x 3-inch loaf pans.
Bake for 45 to 50 minutes.
