Maque Choux - cooking recipe

Ingredients
    1 onion, chopped
    1/4 c. olive oil
    2 Tbsp. butter
    10 ears fresh corn (kernels cut from cob)
    4 fresh tomatoes, peeled, seeded and diced
    1 small bell pepper, seeded and diced
    salt and pepper to taste
    sugar to taste
Preparation
    Saute onion for a few minutes in olive oil and butter, then add bell pepper.
    A couple of minutes later, add corn, stirring all the while.
    This mixture should just be about done, then add diced tomatoes.
    Cook about 2 more minutes, then season with salt, pepper and sugar.
    Makes 6 servings.
