Pepper Relish - cooking recipe

Ingredients
    6 green peppers, chopped
    6 red peppers, chopped
    6 medium onions, chopped
    2 c. vinegar (5% acidity)
    1 1/2 c. sugar
    2 Tbsp. plus 1 tsp. mustard seed
    1 fresh hot pepper
Preparation
    Combine all ingredients in a large Dutch oven and bring to boil.
    Reduce heat to medium.
    Cook uncovered 30 minutes, stirring occasionally.
    Discard hot pepper.
    Pack into hot sterilized jars, leaving 1/4 inch headspace.
    Cover with metal lids.
    Screw bans tight.
    Process in boiling water bath 5 minutes.
    Yield:
    11 half pints.
