Chicken With Eggplant - cooking recipe

Ingredients
    1 quartered chicken
    2 small eggplants (1 1/4 lb.)
    1 large peeled onion
    2 small tomatoes (1/2 lb.)
    2 Tbsp. olive oil
    1/2 c. dry wine
    1/2 c. chicken broth
    1/4 c. wine vinegar
    1 Tbsp. minced garlic
    1 bay leaf
    1/4 tsp. thyme
    1/4 tsp. red pepper flakes
    parsley
Preparation
    Sprinkle chicken with salt and pepper.
    Set aside.
    Trim off eggplant ends, cut in 1/2 lengthwise and each 1/2 in thirds lengthwise.
    Then cut across in 1-inch sections (total 5 cups). Cut onion in 1/2.
    Slice thin (total 1 cup).
    Core tomatoes and cut into small cubes (total 1 1/2 cups).
