Mandarin Duck Salad - cooking recipe
Ingredients

2 tsp. margarine
1/2 c. sliced almonds
1/2 c. olive oil
1/4 c. red wine vinegar
1 Tbsp. grated onion
1/4 tsp. salt
1/4 tsp. pepper
12 oz. fresh spinach, washed, trimmed and torn into bite-sized pieces
1 c. shredded cooked duck
1 c. sliced fresh mushrooms
1 small red onion, thinly sliced
11 oz. can Mandarin orange segments, drained
Preparation

In small skillet, melt margarine over medium-low heat.
Add almonds.
Cook until light golden brown, stirring constantly. Remove from heat; cool.
