Jalapinto Rice Casserole - cooking recipe

Ingredients
    1/2 c. chopped onion
    1 Tbsp. melted butter
    1 lb. lean ground beef
    2 (15 oz.) cans jalapeno pinto beans
    2 c. cooked rice
    1 (16 oz.) can tomatoes, drained and chopped
    1 c. sharp Cheddar cheese, shredded
Preparation
    Saute onion in butter until tender.
    Add ground beef and brown.
    Stir in pinto beans, rice and tomatoes.
    Mix well.
    Pour into a 2-quart casserole dish.
    Sprinkle cheese over top.
    Bake at 350\u00b0 for 20 minutes or until cheese is melted.
    Serves 6 to 8.
