Chicken Fricassee - cooking recipe

Ingredients
    1 fryer, cut up
    2 c. water
    1 1/2 tsp. salt
    1/2 c. green onion, chopped
    3/4 c. roux
    1 onion, chopped
    1 tsp. red pepper
    1/2 c. parsley, chopped
Preparation
    In heavy pan, combine chicken, roux, onion, salt, pepper and water.
    Cook, covered, on low heat for about 1 hour or until chicken is tender.
    Add green onions and parsley.
    Cook another 10 minutes.
    Serve with cooked white rice.
