Texas Pie - cooking recipe
Ingredients

3 eggs
2 c. sugar
2 Tbsp. flour
2 Tbsp. cornmeal
1 stick butter, melted
1 tsp. vanilla
1 tsp. lemon juice (optional)
1 c. flaked coconut
1 small can crushed pineapple
1 (9-inch) unbaked pie crust
Preparation

Beat the first 7 ingredients together until blended.
Stir in coconut and pineapple.
Pour into pie crust.
Bake for 5 minutes at 425\u00b0.
Reduce oven temperature to 325\u00b0; bake for about 1 hour longer.
