Shrimp With Feta Cheese - cooking recipe

Ingredients
    2 cans (16 oz. each) stewed tomatoes
    1 (1 lb.) pkg. frozen shelled and deveined shrimp
    1/4 lb. Feta cheese, crumbled
    4 c. cooked brown rice (1 1/3 c. uncooked)
    1/4 c. chopped parsley
Preparation
    Simmer tomatoes in a large skillet for 10 to 15 minutes or until tomato liquid is reduced by about half.
    Add shrimp; simmer just until they begin to turn pink; sprinkle with cheese.
    Cover skillet; simmer about 5 minutes longer or until shrimp are cooked and cheese is hot.
    Spoon rice onto a large serving platter; top with shrimp mixture.
    Sprinkle with parsley.
