Eggplant Stuffed Artichokes - cooking recipe

Ingredients
    1 eggplant, sliced into 1/2-inch slices then chunks
    1 Tbsp. oil
    3 green onions, chopped
    1 tomato, diced
    garlic to taste
    2 to 3 artichokes
Preparation
    Wash eggplant and saute in oil with onions, tomato and garlic. Steam artichokes until done.
    Stuff with eggplant mixture and serve hot.
