Santa Fe Chicken - cooking recipe

Ingredients
    1 1/4 lb. chicken breasts, boned and skinned
    1 tsp. paprika
    1 tsp. salt
    1/4 tsp. pepper
    2 tsp. olive oil or butter
    1 medium onion, chopped
    1 small green pepper, chopped
    1 garlic clove, minced
    1 (10 oz.) can diced Ro-Tel tomatoes and green chilies
    1 1/2 c. instant rice, uncooked
    3/4 c. (3 oz.) Monterey Jack cheese, shredded
    1 can chicken broth
Preparation
    Cut chicken into thin strips.
    Sprinkle with paprika, salt and pepper.
    Heat olive oil or butter in 10-inch skillet over medium-high heat.
    Add chicken to oil and cook for 2 minutes.
    Add chopped onion, green pepper and garlic to skillet.
    Cook until tender, about 4 minutes, stirring frequently.
