Ingredients

1/4 c. chopped onion
1/4 c. chopped green pepper
1 clove garlic, minced
1 Tbsp. vegetable oil
1/4 c. tomato paste
1/2 tsp. oregano
1/2 tsp. basil
salt and pepper to taste
4 eggs
1 c. (4 oz.) grated Mozzarella cheese
Preparation

Allow 3 eggs for 2 servings.
For each egg, add 1 tablespoon evaporated milk, 1/8 teaspoon salt and pepper.
Beat eggs slightly; beat in milk and seasonings.
Heat 1 tablespoon butter in heavy skillet and add eggs and cook slowly.
