Vermicelli With Spinach And Pasta Sauce - cooking recipe

Ingredients
    8 oz. vermicelli
    2 Tbsp. olive oil
    1/2 lb. fresh chopped spinach
    1/4 tsp. salt
    1/4 tsp. pepper
    1 c. part skim Ricotta cheese
    1/4 c. skim milk
    1 pt. pasta sauce
    1/2 c. grated Parmesan cheese
Preparation
    Cook spinach in olive oil over medium heat about 10 minutes, stirring constantly.
    Add salt, pepper, Ricotta and skim milk. Cook over low heat until mixture is heated through.
    Do not allow to boil.
    Simmer pasta in sauce in a small pan; heat through. Cook vermicelli according to package; drain.
