Lemon Meringue Pie(Makes One 9-Inch Pie) - cooking recipe

Ingredients
    1 1/2 c. sugar
    1 1/2 c. water
    1 Tbsp. butter
    1/3 c. cornstarch
    3 egg yolks, beaten
    1/2 c. lemon juice
    baked 9-inch pie shell
Preparation
    In a saucepan mix the sugar and cornstarch very well. Gradually stir in water.
    Cook over medium heat and stir constantly until mixture gets thick.
    Boil 1 minute.
    Stir a little of this hot mixture very slowly into the egg yolks.
    Then blend this mix into the hot mix in saucepan.
    Return to heat and boil about 1 minute more, stirring constantly until smooth and thick.
    Blend in butter.
    Stir to melt and then add lemon juice and stir well.
    Pour into baked shell.
    Cover with meringue.
    Be sure to seal meringue to crust so it doesn't shrink.
    Bake in a 400\u00b0 oven for 8 to 10 minutes or until light golden brown.
