Eggplant And Mozzarella - cooking recipe

Ingredients
    1 medium eggplant
    1 minced garlic clove
    3 Tbsp. olive oil
    1 c. crushed tomatoes
    1/4 c. slivered basil
    5 oz. cubed Mozzarella
    1/2 c. cooked rigatoni
Preparation
    Saute the eggplant (cubed) with minced garlic in olive oil. Stir in the tomatoes and simmer for 10 minutes.
    Toss with basil, cubed Mozzarella and rigatoni.
