Peasant Potatoes - cooking recipe
Ingredients

4 Tbsp. unsalted butter
1 large sweet onion, diced
2 large cloves garlic, chopped
1 tsp. dried oregano
1/2 lb. smoked beef sausage, cut into 3/4 inch slices
6 medium potatoes, cut into 1-1/2 to 2 inch pieces
Salt and pepper to taste
2 c. sliced Savoy or other cabbage
1 c. diced or sliced roasted red bell peppers
1/2 c. shaved fresh Parmesan cheese
Preparation

In a large skillet over medium heat, melt butter.
Add onion and garlic.
Cook and stir 5 minutes or until onion is transparent. Stir in oregano and sausage and cook about 5 minutes more.
Stir in potatoes, salt and pepper until potatoes are well coated with butter.
Place mixture in slow cooker.
Cover and cook on High 3 to 4 hours or on low for 6 to 8 hours, stirring every hour if possible.
During last 30 minutes of cooking, add cabbage and peppers.
Sprinkle with Parmesan cheese before serving.
Makes 6 side dish servings or 4 main dish servings.
