Cashew Chicken - cooking recipe
Ingredients

1 lb. chicken tenderloin, cut into strips
1 c. snow peas, cleaned
1 c. broccoli florets
1 c. cauliflower florets
1 c. bok choy, sliced thin
1 c. green pepper, sliced julienne
8 cherry tomatoes
1 c. scallions, sliced 1-inch
1 lb. cashews
1 tsp. fresh ginger, chopped fine
1 oz. soy sauce
1 oz. hoisin
1 oz. sherry
1 tsp. fresh, crushed garlic
8 oz. egg whites
4 oz. cornstarch
Preparation

Dip chicken in egg whites and cornstarch.
Saute chicken.
Add vegetables, sherry, soy sauce, hoisin, garlic and ginger.
Add snow peas, cherry tomatoes, bok choy and cashews.
Total cooking time is about 10 minutes.
Yields 4 servings.
