Seafood File Gumbo - cooking recipe
Ingredients

1 lb. chicken parts
1/2 c. flour
1/2 c. oil
2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green onions
1/2 c. chopped parsley
1 lb. sliced smoked sausage
6 toes garlic, chopped
1 1/2 qt. water
1 Tbsp. salt
1 tsp. black pepper
red pepper to taste
2 lb. shrimp
6 small crabs, cleaned
1 doz. oysters and juice
1 Tbsp. file
Preparation

In a medium sized pot, make a roux with flour and oil.
Saute onions and celery on high for 3 minutes.
Stir in water and seasoning and chicken.
Cover and cook for 15 minutes.
Add shrimp and crabs; reduce heat.
Cook 25 minutes; add oysters, juice and sausage.
Cook 10 minutes.
Sprinkle with file.
