Ingredients

2 c. granulated sugar
1 c. shortening
5 eggs
2 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1 c. buttermilk or sour milk
1 tsp. coconut extract
1 (7 oz.) pkg. flaked coconut
Preparation

Cream granulated sugar and shortening. Add eggs one at a time, beating well after each. Sift flour, baking powder and salt together. Add the mixture alternately with buttermilk or sour milk. Add coconut extract and flaked coconut. Place in a greased and floured tube pan (a 2 piece pan works best). Bake at 350\u00b0 for 50 to 60 minutes. Remove from oven. While still hot, punch holes in cake and slowly pour the glaze over cake, allowing it to seep into holes and down sides and middle. Cool thoroughly before removing from pan. Cake will cut better if allowed to firm up overnight.
