Black Bean Soup - cooking recipe

Ingredients
    1 1/2 c. dried black beans
    1 1/2 qt. water or stock
    2 Tbsp. oil, divided
    1 carrot, grated
    1 onion, chopped
    1 potato, grated
    1 rib celery, chopped
    1 bay leaf
    1 tsp. oregano
    1/4 tsp. savory or thyme
    2 tsp. salt
    1/8 tsp. pepper
    1/2 lemon, sliced thin
    juice of 1 lemon
Preparation
    Wash beans; put in a large pot with the water or stock and 1 tablespoon oil.
    Cover tightly and bring to a boil, then reduce to a simmer for 2 1/2 hours or until beans are tender.
