Flora'S Pepper-Rice Rings And Pork Chops - cooking recipe

Ingredients
    2 Tbsp. shortening
    6 pork chops
    onion slices (6)
    green pepper slices (6)
    1 1/2 c. quick cooking rice
    46 oz. can tomato juice
    1 1/2 tsp. salt
Preparation
    Heat fat.
    Brown chops on both sides.
    Place onion and pepper ring slices on each chop.
    Fill rings with rice.
    Pour (spoon) tomato juice over rice to moisten.
    Add seasoning.
    Reduce temperature (to about 240\u00b0).
    Cook approximately 1 hour.
