Minted Cucumber Salad - cooking recipe

Ingredients
    2 c. cucumber, seeded and chopped
    1/4 c. chopped red onion
    2 Tbsp. rice vinegar
    1 tsp. sugar
    1/2 tsp. salt
    1/2 tsp. pepper
    1 c. plain fat-free yogurt
    3 Tbsp. fresh mint, chopped
Preparation
    Combine cucumber, onion, vinegar, sugar, salt and pepper. Toss well.
    Add yogurt and fresh mint.
    Stir well to combine. Refrigerate.
