Shrimp Scampi For Two - cooking recipe

Ingredients
    12 jumbo shrimp, shelled, deveined and tails intact
    1 c. olive oil
    3 Tbsp. Marsala or dry white wine
    2 Tbsp. minced parsley
    2 cloves garlic, crushed
    1 tsp. salt
    several grindings of fresh pepper
Preparation
    Soak fish in buttermilk overnight or for 4 to 6 hours.
    Wash well, removing buttermilk.
    Drain on paper towels.
    Squeeze lemon juice over fish.
    Roll in mixture of cracker meal, flour and small amount of cornmeal if desired.
    Fry in heavy skillet (cast-iron) in enough Crisco plus 1 tablespoon butter to cover bottom of pan well.
