Turkey Escallopes With Plums - cooking recipe
Ingredients

1 lb. turkey breasts, sliced thinly to 1/2 to 3/4-inch
6 oz. apple juice
6 Tbsp. soy sauce
6 Tbsp. dry sherry
1 large clove garlic, crushed
2 tsp. fresh chopped thyme or 1/2 tsp. dried thyme
1 Tbsp. butter
2 Tbsp. vegetable oil
3/4 lb. plums, washed, pitted and halved
salt and pepper (only if desired, but avoid overpowering the marinade)
Preparation

Pound turkey if necessary between two sheets of waxed paper to uniform thickness.
Place in a large bowl.
Pour the apple juice, soy sauce, sherry, garlic and thyme over the turkey and mix gently.
Cover and refrigerate overnight or for 3 to 4 hours. Remove turkey and reserve the marinade.
Heat butter and oil in large skillet.
Quickly brown turkey on both sides.
(Be careful not to overcook.)
Add the plums and reserved marinade.
Cover and simmer gently 10 to 15 minutes.
Garnish with fresh thyme and dusting of pepper and serve.
