Ice Cream Muffins - cooking recipe

Ingredients
    2 c. self-rising flour
    2 tsp. oil
    1 egg
    2 c. vanilla ice cream
    1 c. blueberries or strawberries (optional)
Preparation
    Combine flour, egg, oil and ice cream in bowl.
    Beat until smooth.
    Stir in berries.
    Fill well-greased muffin cups 3/4 full. Bake at 425\u00b0 for 20 to 25 minutes or until brown.
    Serves 6 to 8.
