Chicken Scaloppini - cooking recipe

Ingredients
    12 eggplant slices (1/2-inch thick)
    1 lb. sliced mushrooms
    6 boneless, skinless chicken breasts or turkey cutlets
    2 Tbsp. butter
    2 Tbsp. flour
    6 green onions, chopped
    3/4 c. beef broth
    1/2 c. dry Sauterne
    1/4 c. parsley
Preparation
    Slice chicken thin and flour.
    Saute in olive oil until golden brown.
    Season with garlic salt.
    Layer chicken and top with eggplant and mushrooms in a baking dish.
    In a pan, melt butter and add flour and onions.
    Stir in broth, Sauterne and parsley. Mix to a nice gravy.
    Pour over chicken and eggplant.
    Bake, covered, 30 minutes at 325\u00b0.
