Chicken Ratatouille - cooking recipe

Ingredients
    1 small eggplant, chunked
    2 small zucchini, chunked
    1 medium green pepper, chunked
    1 onion, chopped
    2 garlic cloves, crushed
    1/2 lb. mushrooms, sliced
    1 (16 oz.) can tomatoes
    1 Tbsp. Italian spices *
    4 boneless chicken breasts, cut in cubes
    1/4 c. olive oil
Preparation
    *You may substitute 1/2 teaspoon dried basil and 1/2 teaspoon oregano for Italian spices.
