Sweet And Sour Pork - cooking recipe

Ingredients
    1 (20 oz.) can unsweetened pineapple chunks (undrained)
    vegetable cooking spray
    1 1/2 lb. lean boneless pork, cut into 1 inch cubes
    1/2 c. chicken broth
    1/4 c. vinegar
    1 Tbsp. brown sugar
    1 Tbsp. plus 1 tsp. soy sauce
    1/2 tsp. ground ginger
    1 medium-size green pepper, cut into thin strips
    1 small onion, cut thin
    2 Tbsp. cornstarch
    2 Tbsp. dry sherry
    4 c. hot cooked rice
Preparation
    Drain
    pineapple, reserve juices;
    set\taside.\tCoat
    a large skillet with cooking spray,
    medium heat until hot.
    Add pork, brown on all sides.
    Remove
    pork, drain on paper towel. Wipe skillet with paper towel, return pork to skillet, stir in reserved pineapple juice, broth, vinegar, sugar, soy sauce and ginger. Bring to boil,
    cover,
    reduce
    heat, simmer 20 to 25 minutes or until
    pork is tender.
    Add pineapple, green pepper and onion, cover and simmer 4 to 5 minutes or until vegetables are tender. Combine
    cornstarch and sherry, stir until blended, pour over pork mixture.
    Cook, stirring constantly, until thickened and bubbly.
    Serve over rice.
    Makes 8 servings.
