Squash Relish - cooking recipe

Ingredients
    12 c. squash, hand cut in 1/4-inch cubes
    6 tsp. salt
    2 green peppers
    1 c. onion
    2 jars pimento or 2 large red peppers
    2 cucumbers
    2 1/2 c. white vinegar
    1 tsp. turmeric
    1 tsp. celery seed
    5 c. sugar
    hot pepper (optional)
Preparation
    Mix squash and salt.
    Soak overnight.
    Wash and drain.
    Cut peppers, onion and cucumbers in 1/4-inch cubes.
    Mix all ingredients. Bring to a boil.
    Pack and seal.
