Thai Pork And Peanuts(Appetizer) - cooking recipe

Ingredients
    1/2 c. shredded coconut
    1 Tbsp. salad oil
    1/2 c. chopped onion
    1/4 c. chopped ginger
    2 Tbsp. chopped garlic
    1 lb. ground pork
    1/3 c. lime juice
    1/4 c. chopped cilantro
    1/2 c. chopped peanuts
    3 to 4 Tbsp. hot chilies
    3 Tbsp. soy sauce
    1 head leafy green lettuce, rinsed and separated
Preparation
    Stir coconut in frying pan until crisp; set aside.
    Cook onion, ginger and garlic in oil.
    Saut pork in same pan.
    Spoon off fat.
    Add lime juice, cilantro, peanuts, coconut, chilies and soy sauce.
    Put in a bowl and serve with lettuce leaves to wrap pork.
