Red Beans And Sausage With Rice - cooking recipe

Ingredients
    1 small ham hock or 1 slice ham (no-fat)
    1 lb. dried red kidney beans
    2 c. chopped onion
    1 1/2 c. celery
    1 1/2 c. green pepper
    1/2 c. green onions
    1 c. ketchup (or 8 oz. tomato sauce)
    1 tsp. garlic powder
    1 tsp. oregano (whole)
    1 tsp. thyme (whole)
    1/2 tsp. pepper (white or black)
    1/2 tsp. red pepper
    2 bay leaves
    2 to 3 dashes hot sauce
    1 lb. lite smoked sausage or Polish kielbasa sausage
Preparation
    Wash beans, soak at least 8 hours; drain.
    Cover beans with water.
    Add ham, boil, cover and simmer 45 minutes.
    Add ingredients onion through hot sauce.
    Cover and cook 1 hour.
    Stir occasionally.
    Add sausage.
    Cook, uncovered, 45 minutes.
    Serve over rice.
