Stir-Fry Cashew Chicken - cooking recipe
Ingredients

4 chicken breasts, boneless, skinless and sliced
1 clove garlic, chopped
3 green onions (including tops), chopped
1 medium green pepper, sliced
1/2 lb. fresh mushrooms, sliced
1/4 c. soy sauce
3/4 tsp. sugar
2 Tbsp. cornstarch
3/4 c. chicken broth
5 Tbsp. vegetable oil
3/4 c. cashew nuts
Preparation

Stir together soy sauce, sugar, cornstarch and chicken broth. In wok or frypan, stir-fry chicken for about 3 minutes.
Add garlic, green onions, green pepper and mushrooms and continue to stir-fry for about 2 minutes.
Lower heat and stir in soy sauce mixture.
Cook until sauce thickens.
Serve hot over cooked rice. Sprinkle with cashew nuts.
