Apple Muffins - cooking recipe
Ingredients

1 1/2 c. brown sugar
2/3 c. oil
1 egg
1 c. buttermilk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1/2 tsp. nutmeg
2 1/2 c. flour
1 3/4 c. shredded apples
Preparation

Combine brown sugar, oil and egg.
Add buttermilk, baking soda, salt, vanilla and nutmeg.
Stir in flour until well blended. Fold in apples.
Divide mixture among 18 greased muffin cups. Bake at 325\u00b0 for 30 minutes.
These freeze well.
