Ingredients

1 cup sugar
1 Tbsp butter
2 Tbsp flour
Grated rind & juice of one lemon
2 egg yolks, beaten
2 egg whites, beaten
1 cup milk
Preparation

Cream together sugar, butter, flour, the juice and rind of the lemon.
Mix egg yolks with milk and add to first mixture.
Fold this into beaten egg whites.
Pour into well buttered pudding dish. Place dish in pan (shallow) of warm water.
Bake in 325\u00b0 oven until set firm and golden brown.
Serve warm or cold.
